Chef (San Diego)

We are a neighborhood eatery offering casual upscale American comfort fare serving breakfast, lunch and dinner. We are currently looking for a culinary-driven chef that will take full responsibility over kitchen operations. This is a “working” chef position and you will be required to work the line and perform prep work functions while simultaneously meeting your management responsibilities. You must have practical experience in breakfast, lunch and dinner service and have full availability to work days, nights and weekends. Proven ability to manage food and labor costs along with strong communication and training skills are a must!

We are still a fledgling restaurant facing many challenges and issues. Long hours and long weeks for the Chef are the current “norm” and are expected to continue over the next few months. Of course, your schedule will improve based on your ability to rectify these issues and as business increases.

This position will require the following.

Basic Requirements:
– Strong line skills
– High standards of quality in both food preparation and presentation
– Learn current recipes and make all recipes in a consistent and exact manner
– Speed of service/sense of urgency
– Ability to work well under pressure while maintaining your composure
– Multi-tasking
– Must be very organized and able to work in a limited space
– Sanitation & running clean
– Solid work ethic
– High energy/stamina

Chef Requirements:
– Must be a leader that teaches by example and willing to teach and train individuals
– Must be currently ServSafe Certified
– Ensure sanitation and health code requirements are being followed by the staff
– Kitchen staff scheduling
– Labor, food and all controllable costs related to the kitchen
– Menu planning and development
– Staff development
– Ordering and inventory control
– Kitchen safety
– Equipment maintenance

Catering experience a plus (but not required).
