Chef Tournant – Hilton Des Moines Downtown

Hilton is looking for a Chef Tournant to join our culinary team at our Downtown Des Moines property!

In this role, you will be work in outlets and banquets as a relief for the Banquet Chef and RestaurantChef reporting directly to the Executive Chef.

What will I be doing?

As a Chef Tournant, you will assist the Executive Chef in overall responsibility for activities of cooks and other personnel involved in preparing, cooking and presenting food in accordance with quality standards, productivity standards, cost controls, and forecast needs. Specifically, you would be responsible for performing the following tasks to the highest standards:

  • Monitor team performance, product quality and production flow.

  • Provide coverage as Chef on Duty in both restaurant and banquet kitchen areas as needed.

  • Assist on the line during peak business times.

  • Interview, select, train, appraise, schedule, and manage kitchen staff during the shift.

  • Manage kitchen staff in the proper preparation, cooking, and garnishment of various menu items.

  • Assist in the development and enforcement of policies to control food cost and quality.

  • Ensure proper receiving, storage (including temp setting) and rotation of food products to maintain compliance with Health Department regulations.

  • Lead menu planning activities.

  • Schedule culinary staff so that proper coverage is maintained while keeping payroll costs in line.

  • Perform other duties as required.

What are we looking for?

  • Two (2) or more years’ experience as a professional Chef in a full-service restaurant and/or banquet operation
  • Open availability to work varying days and shifts, including but not limited to, evenings, weekends, and holidays
  • Strong interpersonal and communication skills, with the ability to successfully lead and motivate a team
