BAR MANAGER (Mount Prospect)

Reports To: General Manager

Job summary: Responsible for the initial training of all bar service staff and maintenance of Minta standards of great service. Periodically reviews and updates specialty beverages, working closely with General Manager on all beverage programs and menu. Will also periodically facilitate scheduling of deep cleaning, follow up training, and testing of all (FOH) service staff.

Essential functions:

Master functions outlined in Bartender, Server, and Cocktail Server Job descriptions.
Schedule, conduct, and/or supervise all aspects of FOH training including classes, tastings, and follow-up tastings.
Review and update all bartenders’ service manuals, training hand-ons, evaluations, and bartender side work assignments.
Maintain and or update standing “zoning” procedures of the bar.
Observe bar service system for all bar staff and implement changes accordingly.
Effectively communicate bar service observations to management.
Organize and conduct service brush up seminars at the bar.
Identify and address individual bar employee service strengths and weaknesses.
Work with all service staff on improving service inconsistencies either individually or in a group setting.
Assist with training of newly hired or developed service staff members in regards to beverage program
Designs new specialty beverages with collaboration of Beverage Manager, General Manager and Kitchen Supervisor
Assist with General Manager on possible beverage marketing potential.
Understand and assist with appropriate assignment of costs to all beverages in the restaurant.
Assist with every end of month inventory.
Assist with coding of all beverage invoices
Call in weekly orders to all beverage vendors
Rotate and check quality of all products and mixes that involve the bar.
Maintain all safety and sanitation standing operating procedures.

Acquire and wear appropriate uniform as prescribed in the training manual
Ensure maintenance and cleanliness of uniform
Maintain a well-manicured appearance as an individual who reflects the established image of the restaurant
Conduct a team-player mentality
Follow supervisor’s instructions
Exhibit ability to work in a frequently stressful environment
Make appropriate judgment under demanding conditions
Ensure that all alcoholic beverages are correctly recorded on quest check by servers and cocktail severs
Assist servers in preparing appropriate presentation of beverages
Maintain clean and orderly work area throughout shift as well as in preparation for the following shift
Determine discontinued service to an intoxicated guest
Responsibly and immediately advise co-workers and manager of guests suspect of alcohol intoxication
Notify problems to management immediately while maintaining professional etiquette
Must be BASSET/ or have completed a certified alcohol awareness training course, or have the ability to obtain certification within 30 days of being hired.
Must be ServSafe certified, or have the ability to obtain certification within 30 days of being hired.

Qualification standards:

Must have 2 years of experience in full service bar or equivalent. Must have accurate mathematic skills.
Must have knowledge and experience in preparation of alcoholic beverages.
Must have thorough knowledge of types of liquors and wine and their distinctions of use.
After training, must be able to pass an exam in English within 90% or better in each of the following:
Menu and specials
Wine list
Liquor list and recipes for special drinks
Liquor liability laws and knowledge
Accounting procedures
Individual restaurant orientation material including rules and philosophies

Work Rules/Unacceptable Performance:

Theft or unauthorized removal of company property, including food or beverage.
Eating or drinking certain unauthorized items during shift.
Being under the influence of illegal drugs, alcohol, or other mood altering substances while on the job. Possession and/or distribution of illegal drugs or weapons.
Storage of unauthorized items in personal locker.
Resorting to any physical violence or harassing behavior.
