Executive Chef-Trumbull Country Club

We are seeking an enthusiastic, creative and fully qualified chef to lead and run a busy restaurant kitchen. The Trumbull Country Club offers a fine dining experience and beautiful views of the country club’s landscape and golf course. We feature high quality modern cuisine, with an emphasis on fabulous fresh food from the local area. The restaurant caters to club members, corporate events and weddings. The Executive Chef must be passionate about food, experienced, reliable, hardworking, have exceptional culinary skills and strong leadership skills.

Duties for this position include:

  • Create unique and innovative men
  • Develop unique and innovative menus, with the General Manager, for all member dining including club events as well as menus for private events
  • Establish standardized recipes and specifications to ensure a high level of consistency every day
  • Develop and implement culinary standards, guidelines and procedures
  • Oversee all production of food
  • Hire, orient and train team members to ensure that the highest standards of quality Create and manage production team member schedules
  • Order food, kitchen supplies and equipment in accordance with company vendor policies
  • Conduct regular physical inventory of food and non-food items
  • Establish controls to minimize food and supply waste and theft
  • Project annual food and labor costs and monitor actual financial results
  • Plan and supervise special events
  • Handle any food preparation issues (i.e. food shortages, excesses, outdated products, poor quality) by taking action to correct problems
  • Engage with members and guests to enhance their dining experience
  • Participate on a par level with all department heads
  • Attend and participate in staff meetings
  • Undertake special projects as assigned by the General Manager

Requirements:

  • Executive Chef experience managing a busy kitchen
  • Culinary certification preferred
  • Progressive career path marked with stability and upward mobility
  • Experience ordering and monitoring supplies
  • Thorough knowledge of a variety of cuisines including current and regional trends
  • Creativity and passion to help our team produce innovative dishes
  • Excellent verbal & written communication skills as well as appropriate computer skills
  • A passion towards safety and sanitation
  • Ability to create and develop a talented staff to provide consistency in all food and service functions
  • Professional appearance
  • Ability to provide a high level of member service
