Cook I – Banquet – Hilton Portland Downtown

A Cook I isresponsible for maintaining, setting up, quality food production and qualitycontrol of an entire work area, including meats, fish, poultry, stocks, pastas,vegetables and complex soups and sauces. Must be able to prepare food items foreither catered functions or an assigned restaurant, resulting in guestsatisfaction in the hotel’s continuing effort to deliver outstanding guestservice and financial profitability.

What will I be doing?

A Cook I isresponsible for maintaining, setting up, quality food production and qualitycontrol of an entire work area, including meats, fish, poultry, stocks, pastas,vegetables and complex soups and sauces. Must be able to prepare food items foreither catered functions or an assigned restaurant, resulting in guestsatisfaction in the hotel’s continuing effort to deliver outstanding guestservice and financial profitability. Specifically, you would be responsible forperforming the following tasks to the highest standards:

  • Prepareand monitor all cooks and food items of a specific area assigned in the Kitchenin accordance with specifications and recipes or by guest’s requests. Ensuresthat all food items are fresh by inspecting and tasting for correct seasoning,color presentation, and quality

  • Controlsworking environment for the entire food station assigned. Must comply withlocal and company health regulations. Must demonstrate and teach correct foodhandling and storage techniques and train all staff involved. Ensures that all cooks are cross trained inall stations, have proper products to meet operational needs and supervise inChef’s absence

  • Planmenus, produce to meet operational needs and timeliness of production

  • Assistwith specification and recipe development

  • Maintaincorrect equipment storage and calls in all maintenance issues. Monitorwholesomeness of food

  • Takebreaks and assign staff to take breaks according to break schedules

What are we looking for?

EDUCATION

Any combination of education and experience that provides required knowledge, skills and abilities. Formal culinary training preferred.

EXPERIENCE

A minimum of three years quality food preparation (scratch cooking) is required. Supervisory experience is preferred.

LICENSES OR CERTIFICATES

Multnomah County Food Handlers Card Required.

GROOMING

All team members must maintain a neat, clean and well-groomed appearance (specific standards available).

SPECIFIC JOB KNOWLEDGE, SKILL AND ABILITY

The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation.

  • Ability to read and understand English, food forecasts, recipes and production specifications

  • Advanced knowledge of food quality in all stages. Advanced knowledge of all phases of cooking

  • Ability to lift 50 lbs., and push carts with 200 lbs., of weight

  • Ability to organize work and direct flow of food production

  • Ability to work in an extreme temperature range that is common for a production kitchen
